6 cups Granny Smith apples, peeled, cored, and sliced

1 cup granulated sugar

1/2 cup packed brown sugar

1/4 cup unsalted butter

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon fresh lemon juice

1 tablespoon vanilla extract

1/2 teaspoon fine sea salt

2 pie crusts (store-bought or homemade)

1/2 cup caramel sauce (store-bought or homemade)

1 large egg (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced Granny Smith apples with the granulated sugar, packed brown sugar, flour, ground cinnamon, ground nutmeg, fresh lemon juice, vanilla extract, and fine sea salt. Gently toss the mixture until the apples are well-coated and set aside.

      In a medium saucepan, melt the unsalted butter over medium heat. Once melted, add the coated apple mixture to the pan. Cook for about 5-7 minutes, stirring occasionally, until the apples are just tender but still maintain a bit of firmness. Remove the pan from heat and stir in the caramel sauce until well combined.

        On a floured surface, roll out one pie crust to fit a 9-inch pie plate. Carefully transfer the crust to the pie plate, trimming any excess at the edges.

          Pour the apple-caramel filling into the prepared pie crust, ensuring the mixture is evenly spread.

            Roll out the second pie crust and lay it over the top of the filling. Crimp the edges together to seal the pie, and cut a few slits in the top crust to allow steam to escape during baking.

              In a small bowl, whisk together the egg and milk until smooth to create an egg wash. Brush this mixture generously over the top crust for an alluring golden finish.

                Optional: For an extra touch of sweetness and crunch, sprinkle a small amount of sugar over the top of the crust.
