In a large skillet over medium heat, add the ground beef. Using a spatula, break it apart as it cooks. Sprinkle in the onion powder, garlic powder, smoked paprika, salt, and pepper. Cook for 7-10 minutes, stirring occasionally, until the meat is browned and fully cooked through. If there’s excess fat, drain it carefully to leave the flavorful beef behind.
In a separate pan or the microwave, warm the flour tortillas for about 15-20 seconds, just until they are soft and pliable. This will make them easier to roll.
Place each tortilla flat on a clean plate. In the center of each tortilla, layer ½ cup of the cooked beef followed by a generous amount of shredded lettuce, diced tomatoes, pickles, and cheddar cheese. Finally, drizzle a good amount of Thousand Island dressing over the top.
To secure the filling, fold the sides of the tortilla inward over the ingredients. Starting from the bottom, roll the tortilla upwards, ensuring the filling is snugly and securely wrapped inside.
For a delightful crispy exterior, heat a greased skillet over medium heat. Place the wraps seam-side down and cook for about 2-3 minutes on each side, or until the wraps are golden brown and slightly crispy.
Carefully slice each wrap in half diagonally with a sharp knife. Sprinkle sesame seeds prominently on top for an attractive finish.
Notes
Serve the wraps on a vibrant platter with extra dill pickles and a small bowl of Thousand Island dressing for dipping.
