1/2cupunsalted butter, softened to room temperature
1cuppowdered sugar
1cupgraham cracker crumbs
1teaspoonpure vanilla extract
1 1/2cupssemi-sweet chocolate chips
2tablespoonscoconut oil
Instructions
In a large mixing bowl, use an electric mixer to beat the creamy peanut butter and softened unsalted butter together until the mixture is smooth and creamy.
Gradually add the powdered sugar to the bowl, mixing continuously until fully incorporated.
Stir in the graham cracker crumbs and vanilla extract using a spatula, mixing until the ingredients are evenly blended.
Grease a 9x9-inch baking pan, then press the peanut butter mixture evenly into the bottom of the pan.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Carefully pour the melted chocolate over the pressed peanut butter layer and spread it evenly.
Transfer the baking pan to the refrigerator and chill for at least 2 hours, or until the chocolate has set firm.
After the chocolate is set, remove the bars from the baking pan and cut into equal squares.
Allow the bars to sit at room temperature for about 5 minutes before serving.
Notes
For an elegant finish, arrange the bars on a decorative platter and lightly dust the top with powdered sugar.
