Instructions
In a large mixing bowl, combine the almond flour, rolled oats, and a pinch of sea salt. If you're creating a chocolate version, sift in the cocoa powder to add a rich flavor at this stage.
In another bowl, blend the creamy peanut butter (or almond butter), maple syrup (or honey), and vanilla extract until the mixture is smooth and uniform in consistency.
Pour the wet mixture into the bowl containing the dry ingredients. Stir well with a spatula or wooden spoon until everything is evenly mixed and no dry flour remains.
Gently fold in the mini chocolate chips, distributing them evenly throughout the mixture.
With slightly damp hands, take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter.
Arrange the rolled cookie dough bites neatly on a parchment-lined baking sheet. Transfer the baking sheet to the refrigerator and let the bites chill for about 30 minutes to set their shape.
After chilling, enjoy your delightful no-bake cookie dough bites straight from the fridge, or store any leftovers in an airtight container.
