Ingredients

200g ladyfinger cookies (savoiardi)

1 cup strong brewed matcha tea, cooled

1 cup heavy whipping cream

250g mascarpone cheese

1/4 cup powdered sugar

2 teaspoons vanilla extract

Unsweetened cocoa powder for dusting

Dark chocolate shavings for garnish (optional)

Instructions

Start by pouring the cooled matcha tea into a shallow dish, ensuring it's wide enough to accommodate the ladyfingers.

Take each ladyfinger cookie and quickly dip it into the matcha tea. Make sure to soak the cookies just enough to absorb some tea, but be cautious not to over-soak them until they become soggy.

In a large mixing bowl, whip the heavy cream using an electric mixer until stiff peaks form. This will take about 3-5 minutes on medium-high speed.

In a separate bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Use a spatula or a wooden spoon to mix these ingredients until you reach a smooth, creamy consistency.

Next, carefully fold the whipped cream into the mascarpone mixture in batches. Start with a small amount of whipped cream to lighten the mascarpone, then gradually add the rest, folding gently to retain the airy texture of the whipped cream.

Take a 9x9-inch square dish and layer half of the dipped ladyfingers neatly at the bottom, ensuring they are evenly spaced.

Spoon half of the mascarpone mixture over the ladyfinger layer, spreading it out evenly with a spatula for a smooth finish.

Repeat the layering process with the remaining dipped ladyfingers, finishing with the rest of the mascarpone mixture on top.

Smooth the surface of the final layer with a spatula, then cover the dish tightly with plastic wrap. Place it in the refrigerator to chill for at least four hours, or preferably overnight, to let the flavors meld and the tiramisu to set properly.

Just before serving, generously dust the top of the tiramisu with unsweetened cocoa powder, and if desired, add dark chocolate shavings for an extra touch of indulgence.
