Instructions
In a large mixing bowl, combine the crushed green-tinted cookies with the softened cream cheese. Use a spatula or mixer to blend the ingredients until the mixture is smooth and well incorporated. If you wish to add a minty flavor, incorporate the mint extract at this stage and mix again.
With clean hands, roll the mixture into small balls, approximately 1 inch in diameter. Arrange the balls on a baking sheet lined with parchment paper to prevent sticking.
Once all the balls are shaped, place the baking sheet in the freezer for about 30 minutes, or until the truffles are firm to the touch.
While the truffles chill, melt the white chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth. Be cautious not to overheat.
After 30 minutes, remove the truffle balls from the freezer. Dip each ball into the melted white chocolate, ensuring it is fully coated. Allow any excess chocolate to drip back into the bowl before setting them back down on the parchment paper.
While the white chocolate coating is still wet, immediately top each truffle with a red candy heart or M&M, positioned to mimic the Grinch's heart.
For an added festive touch, melt the green candy melts according to the package instructions, then use a fork or piping bag to drizzle over the truffles for a colorful design.
Let the finished truffles set at room temperature or place them in the refrigerator for about 15-20 minutes until the chocolate is fully hardened.
Once the truffles are set, lightly dust them with powdered sugar to create a snowy appearance, perfect for the holiday season.
