Instructions
Begin by preheating your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a large mixing bowl, add the rolled oats, unsweetened cocoa powder, chopped nuts, chia seeds, and sea salt. Stir these dry ingredients thoroughly until they are evenly combined.
In a separate, smaller bowl, whisk together the melted coconut oil, pure maple syrup (or honey), and vanilla extract until you achieve a smooth mixture.
Pour the wet mixture over the dry ingredients in the large bowl. Use a spatula to gently fold the mixtures together until all the dry ingredients are well coated.
Transfer the granola mixture onto the lined baking sheet, spreading it evenly. Press it down slightly to create clumps.
Place the baking sheet in the preheated oven and bake for 20-25 minutes, stirring halfway through to ensure even baking.
Once the granola is aromatic and slightly crispy, remove it from the oven and allow it to cool completely on the baking sheet.
After cooling, gently fold in the dark chocolate chips or cacao nibs. Break the cooled granola into clusters of your desired size and store in an airtight container.
