In a separate mixing bowl, whisk together the unsweetened cocoa powder, granulated sugar, and a pinch of fine sea salt until well combined. Gradually add a few tablespoons of the hot milk mixture to this bowl while whisking vigorously to create a smooth chocolate paste.
Once the paste is smooth, pour it back into the saucepan with the remaining milk and cream mixture. Whisk continuously until everything is beautifully combined and warmed through—this can take a couple of minutes.
