In a medium mixing bowl, whisk together the eggs, cottage cheese, and a pinch of salt and pepper until the mixture is fully combined and slightly frothy.
Stir in the shredded cheddar cheese, finely diced bell pepper, chopped cooked spinach, crumbled turkey sausage, and minced chives. Mix until all ingredients are uniformly distributed throughout the egg mixture.
Carefully pour the egg mixture into each muffin cup, filling them about 3/4 full.
Place the muffin tin in the preheated oven and bake for approximately 20-25 minutes, or until the egg bites are set and have a slight spring when gently touched.
After baking, remove the muffin tin from the oven and allow it to cool for a few minutes. To ensure easy release, run a butter knife around the edges of each egg bite.
